Busiate of Tumminia semolina, produced with 100% ancient Sicilian grains of the Tumminia type, also called Timilia, cultivated in Sicily since 1200 and still used today to produce baked goods of all types, from bread to pasta, pizzas and focaccias, falling into the durum wheat category. Tumminia is an indigenous Sicilian durum wheat that produces a wholemeal flour, with a typical dark colour, with a low glycemic index and with relaxing properties for the intestine, therefore, it does not produce or in any case reduces the bloating effect of refined wheat. T
he ancient Sicilian wheat does not undergo changes and is milled with natural stone as per ancient tradition. The pasta produced with this flour, although containing gluten, is suitable for restrictive diets, also due to the reduced glycemic index, and the natural absence of mycotoxins which reduces the risk of allergies or intolerances.
