Busiate of Russello durum wheat semolina, produced with 100% ancient Sicilian grains of the Russello type, cultivated in Sicily since 1200 and still used today to produce baked goods of all types, from bread to pasta, pizzas and focaccias, including in the durum wheat type. Russello is an indigenous Sicilian durum wheat, not mixed or processed with herbicides, nor genetically modified, which produces a wholemeal flour, with the typical reddish color from which it takes the name "Russello", with a low glycemic index, around 10%. , and with very high nutritional properties compared to commercial pasta grains easily available on the market.
The pasta produced with this flour, although containing gluten, is suitable for restrictive diets, also due to the reduced glycemic index, and the natural absence of mycotoxins which reduces the risk of allergies or intolerances.
